At Virticle by Jetwing, our bar isn’t just a place to grab a drink — it’s a space where bold ideas, local flavors, and timeless techniques come together. Our mixologists craft each cocktail with purpose, drawing inspiration from Sri Lankan ingredients, traditions, and textures. In this new series, Behind the Bar, we’ll be spotlighting two signature cocktails at a time — and taking you inside the glass to discover what makes them so special. 

The Coconut Union 

Cinnamon-infused coconut arrack | Jetwing Blue coconut treacle | lime juice | house bitters 

A drink that celebrates homegrown heritage, The Coconut Union is a tribute to the classic Sri Lankan toddy culture, reimagined for the rooftop. At its heart is coconut arrack, infused with cinnamon for a warm, spiced aroma. It’s balanced with coconut treacle from Jetwing Blue, lending a subtle sweetness and richness that’s unmistakably local. A squeeze of lime juice brings brightness, while our house bitters add depth and structure. 

Best enjoyed: As a sundowner — this drink is smooth, mellow, and made for golden hour. 

The Virticle 

Pandan and curry leaf infused gin | lime | tonic | house bitters 

Named after the venue itself, The Virticle is both refreshing and deeply rooted in local flavor. We start by infusing premium gin with pandan and curry leaves, creating a green, earthy profile that’s entirely unique. Topped with tonic and a dash of house bitters, it’s an aromatic and vibrant take on the classic gin and tonic — elevated, just like the space it was named after. 

Best enjoyed: Early evening, as the lights come on and the cityscape starts to glow.
